
Yellowfin Avocado Boats with Mango Salsa

Ingredients

1 (5oz) can Wild Planet Yellowfin Wild Tuna, undrained
1/2 cup diced fresh mango
1/3 cup diced cucumber
1-2 Tbsp minced jalapeño
2 Tbsp fresh lime juice
1 Tbsp chopped fresh mint or cilantro
2 avocados
Olive oil, for drizzling
Salt and pepper, to taste
Directions
Empty can of yellowfin tuna into bowl.
Using fork, break up slightly into small, bite-sized pieces.
Add mango, cucumber, jalapeño, and mint or cilantro.
Gently toss until combined.
Cut avocados in half, lengthwise, and remove pits.
Top each avocado half with some of the yellowfin tuna and mango salsa mixture.
Finish with a drizzle of olive oil and a sprinkling of salt and pepper, to taste.
Serve immediately.
