This tuna tower makes for an incredibly well-balanced meal. Fresh avocado, a simple tuna salad, and a pico de gallo combine for a delicious, flavorful bite that's packed with nutrition and quick to put together.
1 (5.5oz) can Wild Planet Skipjack Wild Tuna
1 tsp of Avocado Mayo
½ tsp of Dijon Mustard
Chopped scallions
1 Avocado, chopped into cubes
Lemon juice, to taste
Salt, to taste
1 tomato, chopped
Cilantro, chopped
¼ of a red onion, finely diced
Lemon juice, to taste
Mix all of the tuna salad ingredients together, mix all of the avocado ingredients together, and mix all of the pico de gallo ingredients together.
Now build your tower: Use a forming ring or a tin can with ends removed to layer the salad. Put the avocado on the bottom, layer on the tuna salad, and top with the pico de gallo. Remove your forming ring and enjoy!
