Ingredients

    For the Sauce

  • 3 Tbsp Unsalted Butter

  • ½ medium Yellow Onion, finely diced
  • 3-4 Garlic Cloves, minced
  • ¼ cup All-Purpose Flour (34g)
  • 3 cups Whole Milk
  • 1 cup Sharp Cheddar Cheese, freshly shredded (2.5-2.75oz)
  • ½ cup Parmesan Cheese, freshly shredded (1.25oz)
  • Kosher Salt and Black Pepper to taste
  • For the Stuffed Shells

  • 22 Jumbo Pasta Shells
  • 2 (5oz) cans Wild Planet Foods Albacore Wild Tuna

  • 1 cup Frozen Peas, thawed
  • 8oz Frozen Chopped Spinach, thawed and drained

  • 1 cup Cottage Cheese, blended (220g)
  • 1 cup Cheddar Cheese, shredded (2.5-2.75oz)
  • Kosher Salt and Black Pepper to taste
  • For the Topping

  • ½ cup Panko Breadcrumbs (72g)
  • 1 Tbsp Unsalted Butter, melted

  • 1 tsp Dried Parsley

  • ½ tsp Kosher Salt

  • ¼ tsp Black Pepper

Directions

  1. Preheat oven to 375°F
  2. Cook pasta shells to al dente, drain and arrange on baking sheet to cool
  3. Melt butter in large pan over medium heat
  4. Add onion, sauté 2 minutes, then add garlic and cook 30 seconds
  5. Stir in flour and cook for 2 minutes
  6. Gradually add milk, stirring constantly
  7. Let sauce bubble for 2-3 minutes
  8. Reduce heat and add cheddar and parmesan cheeses
  9. Season with salt and pepper, then set aside
  10. In large bowl, combine tuna, peas, spinach, blended cottage cheese, and cheddar
  11. Add ½ cup of prepared sauce to filling mixture
  12. Season with salt and pepper to taste
  13. Pour ¾ cup sauce into 9x13" baking dish
  14. Stuff each shell with filling and arrange in baking dish
  15. Pour remaining sauce over shells
  16. Combine all topping ingredients and sprinkle over shells
  17. Bake for 25 minutes until golden and bubbly
