Pasta With an Olive Tapenade

Easy weeknight meals are my specialty. I love dinner ideas that are made in one pan, in less than 30 minutes and have minimal ingredients. This recipe has all 3 of those: made with only pasta, olive tapenade, spinach & tuna.

I used Wild Planet Skipjack Wild Tuna for some extra protein, EPA and DHA Omega-3s, iron, and potassium. Wild Planet specifies the exact tuna species, so you know exactly what you are getting every time. Wild Planet tuna has no added broths, water or fillers so there is more fresh, pole and line caught fish in each can.

Ingredients

  • 8 oz Pasta of your choice e.g., penne, fusilli, rotini

  • 1/2 cup Olive Tapenade

  • 1 (5oz) can Wild Planet Skipjack Wild Tuna

  • 2 cups chopped fresh Spinach

Directions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and reserve 1/2 cup of the pasta water.

  2. Prepare the sauce: While the pasta cooks, combine the olive tapenade, flaked tuna, and chopped spinach in a large skillet. Stir until well combined.

  3. Combine and finish: Add the drained pasta to the skillet. Warm ingredients together for 3-5 minutes.

  4. Season with salt and pepper to taste. Serve and enjoy!
