These Tuna Pancakes from our collaboration with GreenPan transform a can of Wild Planet skipjack tuna into something unexpected and delicious. The combination of eggs and flour creates a tender base that holds together beautifully while the tuna delivers protein and umami depth. Cooked in GreenPan's PFAS-free cookware. With just a handful of pantry ingredients and the right tools, you create golden, crispy pancakes.
Ingredients

1 (5oz) can Wild Planet Skipjack Wild Tuna
2 Eggs
¼ cup Flour (or breadcrumbs or almond flour)
¼ small Onion, finely chopped (or scallions)
1 Garlic Clove, minced
1 Tbsp Lemon Juice
2 Tbsp Fresh Parsley, chopped (or any herb)
Salt and Pepper to taste
Olive Oil for cooking
Directions
In a bowl, mash tuna with a fork, keeping some texture (not a paste)
Add eggs, flour, onion, garlic, lemon juice, herbs, and seasoning
Mix until it forms a thick batter (consistency like loose tuna salad)
Heat olive oil in GreenPan cookware over medium heat
Scoop approximately 2 Tbsp per pancake into pan
Flatten slightly with back of spoon
Cook 3-4 minutes per side until golden and crispy
Transfer to plate and serve warm
