This easy weeknight dinner is bursting with protein, healthy fats, and a plethora of crunchy vegetables. It is not only nutritious but also delightfully refreshing.

This salad is made with my favorite protein, Wild Planet Skipjack Wild Tuna. Packed with 32g protein and 582mg Omega-3s per can. With so much pure, complete protein per serving, it provides all the essential amino acids you need. It has no fillers, just natural juices and sea salt.

Ingredients

  • 2 (5oz) cans Wild Planet Skipjack Wild Tuna

  • 2 Persian Cucumbers

  • 2-3 medium Dill Pickles

  • 2 stalks Celery

  • 1/4 Red Onion

  • 2 Avocados, 1 for styling and serving

  • 1/3 cup Cilantro

  • Juice from 1/2 Lemon

  • 2 Tbsp Olive Oil

  • Salt & pepper, to taste

Directions

  1. Add tuna to a mixing bowl and mash with a fork. Finely chop cilantro, cucumbers, pickles, celery, onion, 1 avocado and add it to the bowl as well.

  2. Drizzle with lemon juice, olive oil and add salt and pepper to taste. Mix well.

  3. Serve it in a salad bowl or thinly slice the remaining avocado, and form it into a ring on a plate. Spoon the salad into it and garnish with cilantro.
