Ingredients

  • 16 oz box Rigatoni Pasta
  • 2 (5oz) cans of Wild Planet Albacore Wild Tuna

  • ½ White Onion, diced
  • 1 Tbsp Garlic, minced

  • 8 oz bag Fresh Baby Spinach
  • 14 oz can Artichoke Hearts packed in water, drained and chopped
  • 1 Jalapeño, deseeded and diced
  • 15 oz container Low Fat Cottage Cheese
  • ¾ cup Parmesan Cheese, divided
  • ¾ cup Mozzarella Cheese
  • 1 cup Alfredo Sauce
  • ½ cup Panko Bread Crumbs
  • 3 Tbsp Olive Oil, divided

  • Salt and Pepper to taste

Directions

  1. Preheat oven to 375°F
  2. Cook pasta to al dente according to package directions
  3. Sauté onion in 1 Tbsp oil with salt and pepper (2-3 minutes)

  4. Add garlic and cook for another minute
  5. Add spinach, jalapeño, and artichoke hearts; cook until spinach wilts
  6. Fold in tuna, gently breaking it up with a fork
  7. Add ½ cup parmesan, cottage cheese, alfredo sauce, and mozzarella
  8. Stir until mostly melted, then remove from heat
  9. Mix breadcrumbs, remaining parmesan, and 1 tablespoon oil in a small bowl
  10. Layer half the cheese mixture in 9x13 baking dish
  11. Top with cooked pasta in an even layer
  12. Add remaining cheese mixture
  13. Sprinkle breadcrumb mixture over top
  14. Bake for 20 minutes
