Ingredients

    For the Stuffed Potatoes

  • 1 Russet Potato
  • 1 (5oz) can Wild Planet Skipjack Wild Tuna

  • ½ cup Shredded Cheddar, plus extra for topping
  • 2 Tbsp Cream Cheese

  • 1 Tbsp Sour Cream

  • 1 tsp Hot Sauce

  • ½ tsp Cajun Seasoning

  • 1 tsp Sugar or Monk Fruit Sweetener

  • ½ tsp each: Chili Powder, Smoked Paprika, Old Bay, Garlic Powder, Onion Powder

  • 1½ Tbsp Lemon Juice

  • Parsley or Scallions for garnish
  • For the Sauce

  • 3 Tbsp Mayo

  • ½ tsp Garlic Powder

  • 1½ Tbsp Lemon Juice

  • 1-2 tsp Hot Sauce

  • Zest from half a Lemon
  • ½-1 tsp Sugar or Monk Fruit Sweetener

  • Chili Powder and Smoked Paprika, a heavy pinch of each
  • Salt to taste

Directions

  1. Preheat oven to 400°F
  2. Rub potato with oil and salt
  3. Bake for 50-60 minutes until tender
  4. Let cool slightly, then cut in half
  5. Scoop out most of the flesh, leaving a thin shell
  6. In a bowl, combine potato flesh with tuna, cheese, cream cheese, sour cream, and seasonings
  7. Mix in hot sauce and lemon juice
  8. Stuff mixture back into potato skins
  9. Top with additional cheese
  10. Increase oven temperature to 425°F
  11. Bake for 7-10 minutes until cheese melts
  12. Meanwhile, mix all sauce ingredients until well combined
  13. Drizzle sauce over hot potatoes
  14. Garnish with fresh herbs
