Chicken Al Tonno Sandwich

I love taking a classic and transforming it into a sandwich, but I also just love sandwiches. What I will say is, this sauce was the best I have ever made, and that’s due to the high quality tuna provided by Wild Planet. The sauce also includes garlic, roasted cherry tomatoes, fresh basil, and cream. You have definitely got to put this one on your list of sandwiches to try this year.

I love taking a classic and transforming it into a sandwich, but I also just love sandwiches. The sauce also includes garlic, roasted cherry tomatoes, fresh basil, and cream. You have definitely got to put this one on your list of sandwiches to try this year.

Ingredients

  • 2-4 cloves of Garlic

  • Bunch of fresh Basil

  • 8oz Cherry Tomatoes

  • 1 Tbsp Olive Oil

  • 1 (5oz) can Wild Planet Albacore Wild Tuna

  • ¼ cup Heavy Cream

  • Salt to taste

  • 1 Chicken thigh

  • 1 cup Flour

  • 1 Egg

  • 1 cup Panko breadcrumbs

  • Canola oil, enough for frying (~4 cups)

  • 1 large Shallot

  • ¼ cup Cornstarch

  • Ciabatta bread

  • 2 Tbsp Italian Hot Relish

Directions

    Sauce al tonno

    1. Chop garlic, basil and cherry tomatoes. In a hot pan add olive oil, garlic and the tomatoes, reduce the heat and let cook until the tomatoes are mushy.

    2. Next add Wild Planet Albacore Wild Tuna and your chopped basil, now add heavy cream and cook until thickened. You should have a nice sauce, add salt to taste.

    Fried chicken

    1. Dredge a chicken thigh in flour then a beaten egg and then in panko, then back in the flour. Now deep fry in 300F to 350F oil for 6 minutes. Take out of oil and let rest for 1 minute then put the chicken back in the oil until golden brown or until an internal of 165F is reached. 

    Fried shallots

    1. Chop shallots the long way and dredge in cornstarch then fry until golden brown.

    Sandwich assembly

    1. Toast your ciabiatta bread in the toaster oven or in a pan on the stove until browned.

    2. Spread the bottom of the bread with Italian hot relish. Place fried chicken on top, cover generously with al tonno sauce, then fried shallots, some fresh basil, and then the top piece of bread. Enjoy!
