Ingredients

    For the Crispy Rice

  • 3 cups Cooked Rice

  • 2 Tbsp Olive Oil

  • 2 Tbsp Chili Crisp Oil

  • 2 Tbsp Honey

  • 1 tsp Fine Sea Salt

  • For the Roasted Zucchini

  • 2 Zucchini, chopped

  • 1 Tbsp Olive Oil

  • 1 tsp Fine Sea Salt

  • For the Creamy Lemon Vinaigrette

  • ¼ cup Sour Cream or Plain Greek Yogurt

  • ¼ cup Olive Oil

  • Zest and Juice of 1 Lemon

  • 1 tsp Dijon Mustard

  • 1 tsp Red Wine Vinegar

  • Salt and Black Pepper to taste

  • For the Tuna Salad

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1 Fennel Bulb, finely chopped

  • 1 Tbsp Fresh Tarragon, chopped

  • 1 Tbsp Fresh Mint, chopped

  • 1 cup Marinated Artichoke Hearts, chopped

  • ½ small Red Onion, thinly sliced

SHOP ALL WILD PLANET PRODUCTS

Directions

  1. Preheat oven to 425°F

  2. Line large pan with parchment paper

  3. Toss all crispy rice ingredients together

  4. Spread evenly on half of the pan

  5. Toss all zucchini ingredients together

  6. Spread evenly on other half of pan

  7. Roast 15-20 minutes

  8. Flip both rice and zucchini

  9. Roast another 15-20 minutes until rice is crispy

  10. Let rest 5 minutes on pan

  11. In small bowl, whisk together all vinaigrette ingredients until smooth

  12. Set aside

  13. In large bowl, add drained tuna

  14. Break up with fork into finer pieces

  15. Add chopped fennel, tarragon, mint, artichokes, and sliced red onion

  16. Toss to combine

  17. Add vinaigrette to taste

  18. Toss in crispy rice and roasted zucchini

  19. Serve warm immediately
