Directions

  1. Open sardines and pat dry with paper towels

  2. In a shallow bowl, combine flour, cornmeal, salt, and black pepper
  3. Place beaten eggs in a separate shallow bowl
  4. Cover each sardine in flour mixture, coating completely

  5. Dip in beaten eggs
  6. Dredge in flour mixture again for double coating
  7. Shake off excess coating
  8. Heat avocado oil to 350°F in a deep pan or fryer
  9. Carefully add sardines to hot oil
  10. Fry for 2-3 minutes per side until golden brown and crispy
  11. Serve immediately with lemon wedges and fresh parsley
