This version includes jasmine rice, a mini cucumber, ripe mango, fresh avocado and Wild Planet tuna. Flavored with rice vinegar and soy sauce, this light yet protein-packed lunch will have you returning to this recipe again & again.

A tuna stack is not only quick & easy to put together, it looks beautiful! And the flavors can be customized to your liking. This version includes jasmine rice, a mini cucumber, ripe mango, fresh avocado and Wild Planet tuna. Ingredients

Directions

  1. Mix together rice vinegar and rice and set aside

  2. Chop cucumber and mango, mix & set aside

  3. Drain Tuna & add soy to taste

  4. Begin to make your stack by layering the ingredients and packing & pushing each layer into your round container: start with rice, followed by diced avocado, then tuna mixture, and lastly the cucumber & mango

  5. Place in the refrigerator for about 5 minutes and then flip your stack onto a plate and top with sriracha & sesame seeds. Enjoy!
