These high-protein curry tuna salad lettuce cups make for an easy weeknight dinner that you can throw together in minutes or even a meal prep lunch! I typically make this recipe using shredded rotisserie chicken, and this time I swapped it for Wild Planet sustainably sourced Albacore Wild Tuna, and wow, it really took this recipe to the next level. You can enjoy this salad any way you’d like—make it your own!!

Ingredients

    Salad

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1/2 Red Onion, diced

  • 3 Green Onions, thinly sliced

  • 1/2 cup Cilantro, chopped

  • 1/3 cup Raisins

  • Dressing

  • 1/2 cup Greek Yogurt

  • 3 Tbsp olive oil

  • 2 tsp Curry Powder

  • 1 Lime, juiced

  • 1/2 tsp Kosher Salt

  • 1/2 tsp ground Black Pepper

  • 1/4 cup Water (as needed)

  • To serve

  • Bibb lettuce or romaine lettuce leaves

Directions

  1. Add the tuna to a large bowl, along with the rest of the salad ingredients.

  2. To make the dressing, whisk together all of the ingredients and add the water if needed to thin it out. Pour over the salad and toss to coat well.

  3. Lay out the lettuce on a plate and scoop as much curry tuna salad into the lettuce as desired. Enjoy!
