Ingredients

  • 1 cup Tri-colored Tomatoes
  • 1 (4.4oz) can Wild Planet Wild Sardines In Extra Virgin Olive Oil with Lemon

  • 2 Tbsp Feta Cheese, chopped, plus extra for topping
  • Juice from 1 Lemon
  • 2 Tbsp Extra Virgin Olive Oil, plus more for bread
  • 1 tsp Coarse Sea Salt

  • 1 tsp Black Pepper

  • ½ French Baguette
  • 1 tsp Cilantro, chopped, for garnish

  • Cooking spray

Directions

  1. Preheat oven to 350°F
  2. Grease an oven-safe skillet with cooking spray
  3. Add tomatoes and feta to the bottom of the skillet
  4. Drizzle with lemon juice, olive oil, salt, and pepper
  5. Bake for 20 minutes until tomatoes begin to soften
  6. Meanwhile, slice baguette into small, dippable pieces
  7. Drizzle bread slices with olive oil on both sides
  8. Sauté bread in a pan over medium-low heat until lightly browned and crispy
  9. Set aside until serving
  10. Remove skillet from oven
  11. Add sardines and additional feta on top
  12. Drizzle with more lemon juice
  13. Return to oven for another 15 minutes
  14. Remove from oven and garnish with fresh cilantro
  15. Serve warm with toasted baguette slices for dipping
