This Mediterranean Farro bowl includes all the usual suspects (tomatoes, cucumbers, feta, olives) but the addition of sardines adds a protein-packed twist.
1 cup Farro
1 cup Arugula
1 (4.4oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil
1 (4.25oz) can Wild Planet Wild Sardines Skinless & Boneless Fillets in Water
1/2 cup Cucumbers, chopped
1/2 cup Tomatoes, chopped
1/4 cup Feta
1/4 cup Kalamata olives, cut in half
1 medium Lemon, juiced
2 Tbsp Extra virgin olive oil
1 Tbsp Feta
1/4 tsp Oregano
1/4 tsp Salt
In a blender combine all the dressing ingredients (lemon juice, olive oil, feta, oregano, and salt) until smooth. Alternately if opting to not use a blender, crush the feta in a bowl. Once smooth add the remaining ingredients and mix.
Add all the ingredients to a bowl and top with the lemon feta dressing. Toss to coat and serve.
