Ingredients

  • 4 Garlic Cloves, minced
  • 1 (4.4oz) can Wild Planet Wild Sardines In Extra Virgin Olive Oil with Lemon

  • 1 tsp Olive Oil

  • 12oz Cherry Tomatoes (multicolored and on the vine preferred)

  • ¼ tsp Salt (more to taste)

  • ¼ tsp Black Pepper

  • 16.9oz Bone Broth (about 2 cups)

  • ½ pound Protein Spaghetti Noodles
  • 2 Lemons
  • 2 cups Arugula
  • ½ cup Parmesan Cheese, freshly shredded
  • Fresh Basil, handful
  • ⅓ cup Panko Breadcrumbs

Directions

    For the Pasta

    1. Heat 1 tsp olive oil in a large skillet over medium heat

    2. Add minced garlic and sauté for 30 seconds
    3. Add cherry tomatoes and cook another 30 seconds
    4. Place pasta in the center of the skillet
    5. Zest 1 lemon over the pasta
    6. Sprinkle with salt and pepper
    7. Pour bone broth over everything
    8. Cover and cook 10-12 minutes until pasta is al dente, checking halfway and adding more broth if needed

    For the Sardine Breadcrumbs

    1. While pasta cooks, heat a small skillet over medium heat
    2. Drain sardine oil into the hot pan
    3. Add sardines and mash with a fork
    4. Cover and fry until mostly crispy, about 5 minutes
    5. Transfer sardines to paper towel-lined plate
    6. Add panko breadcrumbs to the same pan
    7. Toast until golden brown, a few minutes
    8. Transfer to bowl and season with salt, pepper, and zest of 1 lemon

    To Finish

    1. When pasta is cooked, add arugula, juice of 1 lemon, and grated parmesan
    2. Stir to combine and cook until arugula wilts
    3. Top with crispy sardines, toasted breadcrumbs, fresh basil, and additional parmesan
    4. Serve immediately
