This classic tuna salad features a unique Mexican spin with the addition of pickled jalapeños. The splash of pickled jalapeño brine elevates this tuna salad to a whole different level of delicious flavor! Fresh Roma tomatoes, red onion, crisp celery and lime juice round out this tasty recipe.
2 (5oz) cans Wild Planet Albacore Wild Tuna
1/2 Red onion, diced
1 Roma tomato, diced
1/2 cup Celery, diced
Pickled jalapeños and pickled brine juice (to taste)
1 Lime, juiced
1/4 cup Mayonnaise
Splash mustard
Salt & pepper (to taste)
1 Avocado, sliced
Chop the fresh ingredients: red onion, tomato, celery, and pickled jalapeño.
To the bowl of fresh chopped vegetables, add mayo, a splash of mustard, pickled jalapeño brine juice, and salt and pepper. Chunk up the Albacore tuna, and mix in.
Place on your vessel - could be bread, saltine crackers, or a tostada - and top with fresh avocado. Other topping options: fresh tomato slices, fresh jalapeños, cilantro, hot sauce. Enjoy!
