Ingredients

    For the Potato Stacks

  • 2 large Potatoes
  • 3 Tbsp Extra Virgin Olive Oil

  • 1 tsp Paprika

  • 1 tsp Salt

  • 1 tsp Pepper

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 1 tsp Italian Seasoning

  • For the Tapenade

  • 1 cup Green Olives, pitted and roughly chopped
  • ½ cup Black Kalamata Olives, pitted and roughly chopped
  • ¼ White Onion, diced
  • 1 tsp Capers, drained

  • 2-3 Wild Planet Wild Sardines In Extra Virgin Olive Oil, chopped

  • Juice of ½ Lemon
  • ¼ cup Extra Virgin Olive Oil
  • Italian Seasoning to taste

Directions

  1. Peel and clean potatoes
  2. Thinly slice using a mandolin or rotary grater
  3. In a large bowl, combine potato slices with olive oil and all seasonings
  4. Mix thoroughly to ensure even coating
  5. Stack 6-8 potato slices for each stack, larger slices on bottom
  6. Secure each stack with a toothpick
  7. Place stacks in air fryer basket
  8. Cover with aluminum foil
  9. Cook at 380°F for 10 minutes
  10. Meanwhile, combine all tapenade ingredients in food processor
  11. Pulse until well combined but still chunky
  12. After initial cooking, remove foil from potato stacks
  13. Continue cooking uncovered for additional 10 minutes until crispy
  14. Remove toothpicks carefully
  15. Top each stack with a spoonful of sardine tapenade
  16. Serve immediately
