Ingredients

Directions

  1. Bring large pot of heavily salted water to boil

  2. Prepare ice bath in large bowl with equal parts ice and water

  3. Add green beans to boiling water

  4. Cook for 3 minutes until tender-crisp

  5. Transfer green beans to ice bath to halt cooking

  6. Drain and pat dry with paper towels

  7. Place on plate and set aside

  8. In a cold skillet, add almonds

  9. Toast over medium heat until golden brown

  10. Transfer to plate and set aside

  11. Return skillet to medium heat

  12. Add butter and minced shallots

  13. Cook until shallots are translucent

  14. Drain sardine oil into pan

  15. Reduce heat to low

  16. Add lemon juice and 1 Tbsp water

  17. Shake pan quickly to emulsify sauce

  18. Add toasted almonds, green beans, and sardines to pan

  19. Toss gently to coat with sauce

  20. Taste and season with additional kosher salt if needed

  21. Cook until green beans are piping hot

  22. Transfer to serving plate

  23. Serve immediately
