2 (3.9oz) cans Wild Planet Wild Smoked Mackerel Fillets in Extra Virgin Olive Oil
1 cup sour cream
Zest of 1 lemon, divided
1 Tbsp fresh lemon juice
1/8 tsp salt
1/4 tsp black pepper, divided
2 Tbsp chives, chopped
1 Tbsp extra virgin olive oil
In a medium mixing bowl, place contents of one can of Wild Planet Wild Smoked Mackerel Fillets and Extra Virgin Olive Oil and break up gently.
To the bowl of mackerel, add sour cream, half of the lemon zest, lemon juice, salt and half of the black pepper.
Stir to combine until creamy and emulsified.
Place in serving bowl.
Open second can of Wild Planet Wild Smoked Mackerel Fillets and place chunks of mackerel fillets on top of dip.
Sprinkle with chives, remaining lemon zest, remaining black pepper.
Drizzle with extra virgin olive oil.
Serve alongside radishes, cucumbers, carrots, endive, and crackers.
