Ingredients

  • 2 (4.4oz) cans Wild Planet Wild Mackerel Fillets in Extra Virgin Olive Oil

  • 1 (8oz) can Tomato sauce

  • ½ Onion, sliced

  • 1 Garlic clove, minced

  • 1 Scallion stalk, chopped

  • 1 Thyme sprig, leaves only

  • ½ Scotch Bonnet Pepper, chopped (seeded for less heat)

  • ¼ Green Bell Pepper, sliced

  • ¼ Red Bell Pepper, sliced

  • ½ tsp Salt, or to taste

  • ½ tsp Black Pepper, or to taste

Directions

  1. Drain oil from one mackerel can into medium frying pan

  2. Sauté aromatics and peppers over medium heat (2 minutes)

  3. Add mackerel fillets (whole or broken up)

  4. Season with salt and pepper

  5. Reduce heat to low

  6. Add tomato sauce, combine well

  7. Simmer 3-5 minutes

  8. Enjoy!
