Ingredients

  • 1 (4.4oz) can Wild Planet Wild Mackerel Fillets In Extra Virgin Olive Oil

  • 1 small Shallot, minced

  • 1/2 Tbsp Fish Sauce

  • 1 Lime, juiced

  • Pinch of Sugar

  • 1/2 Tbsp Toasted Rice Powder (store-bought or homemade)

  • Chili Flakes, to taste

  • Cilantro, Mint, Scallions, chopped 

  • Cucumber, thinly sliced
  • Sticky Rice, for serving

Directions

  1. Prepare shallot, cilantro, mint, and scallions. Set aside.
  2. Transfer mackerel into a bowl.
  3. Add in shallots, fish sauce, lime juice, sugar, toasted rice powder, chili flakes.
  4. Gently mix together.
  5. Taste and adjust if needed.
  6. Add in cilantro, mint, and scallions. Gently mix together.
  7. Serve with sticky rice and cucumber slices.
