This Mediterranean-inspired tuna burger contains dried cranberries, red onions, and spinach & is topped with a tahini sauce – a paste made of toasted & ground sesame seeds.
2 (5oz) cans Wild Planet Skipjack Wild Tuna
-OR-
2 (5oz) cans Wild Planet Albacore Wild Tuna
2 Tbsp Red onion, finely chopped
2 Tbsp Spinach, finely chopped
2 Tbsp dried Cranberries, chopped
½ cup Almond flour (or breadcrumbs)
¼ cup Mozzarella, shredded
1 whisked Egg
2 Tbsp Honey dijon mustard
Sprinkle of salt, pepper, granulated garlic, and ground paprika
1 Tbsp Olive or avocado oil for cooking
Wholegrain buns
Arugula
1 Tbsp Tahini
1/4 cup Honey dijon mustard
1/2 Lemon, juiced
Start by draining both cans of tuna to rid of as much water as possible. If necessary let it sit on paper towels to soak up extra moisture. Add the tuna to a mixing bowl.
Along with the tuna, add chopped red onion, spinach, dried cranberries, almond flour, honey dijon mustard, and one whisked egg. Using a spoon or clean hands, combine all ingredients.
Portion into 6 small patties (or 4-5 large). Use your hands to squeeze/shape them as best as possible. Sprinkle each patty with the seasonings (salt, pepper, granulated garlic, and ground paprika).
Heat oil in a pan on medium heat. Once sizzling, add in the patties. Flip after about 2-3 minutes or until golden brown. Repeat for the other side and any remaining patties.
In a small bowl, combine the sauce ingredients. Assemble the burgers with the sauce, toasted bun, and arugula. Enjoy!
