Ingredients

  • 6 Mini Bell Peppers

  • 2 (5oz) cans Wild Planet Skipjack Wild Tuna

  • ¼ cup Greek Yogurt (or mayonnaise)

  • 1 Tbsp Dijon Mustard

  • ¼ cup Onion, finely chopped

  • ¼ cup Celery, finely chopped

  • Salt and Pepper to taste

  • 3 slices Cheddar Cheese, cut into fourths

Directions

  1. Preheat oven to 350°F

  2. In a bowl, combine tuna, Greek yogurt, Dijon mustard, onion, celery, salt, and pepper

  3. Mix well until combined

  4. Slice mini peppers in half lengthwise

  5. Remove any seeds

  6. Fill each pepper half with tuna mixture

  7. Top each with a piece of cheddar cheese

  8. Place on baking sheet

  9. Bake for 10 minutes until cheese has melted

  10. Serve warm or allow to cool for meal prep

  11. Store in refrigerator for up to 3 days
