Ingredients

  • 1 package (400g) Protein Pasta of choice

  • 2 (5oz) cans Wild Planet Skipjack Wild Tuna

  • ½ Red Onion, small diced

  • ½ medium Apple, small diced

  • ¼ cup Yellow Corn

  • ¼ cup Peas

  • 1 medium Celery Rib, small diced

  • 1 small Jalapeño, small diced

  • 2 Dill Pickle Slices, small diced

  • 3 Tbsp Mayonnaise

  • 1 Tbsp Dijon Mustard

  • 1 Tbsp Apple Cider Vinegar

  • Juice of ½ Lemon

  • ½ tsp Salt

  • ½ tsp Pepper

Directions

  1. Cook pasta to al dente according to package instructions

  2. Drain and set aside to cool

  3. In a large bowl, combine cooled pasta, tuna, diced red onion, diced apple, corn, peas, diced celery, diced jalapeño, and diced pickle

  4. Add mayonnaise, Dijon mustard, apple cider vinegar, lemon juice, salt, and pepper

  5. Mix together until well incorporated

  6. Divide into meal prep containers

  7. Store in refrigerator for up to 5 days
