Ingredients

    For the Chili Crisp Cucumber Tuna Salad

  • 1 (5oz) can Wild Planet Albacore Wild Tuna

  • 1 Tbsp Fresh Basil or Dill, chopped
  • 1 Tbsp Mayonnaise
  • 1 Tbsp Plain Yogurt
  • Juice of ½ Lemon
  • 1 tsp Dijon Mustard

  • ½ tsp Chili Crisp Oil

  • ¼ English Cucumber, finely chopped
  • Salt and Black Pepper to taste
  • For the Snack Plate

  • Cherry Tomatoes
  • Beet Hummus
  • Carrots, sliced
  • Medjool Dates stuffed with Parmesan or Ghee and Dark Chocolate
  • Candy Striped Beets, sliced
  • Crackers
  • For the Blueberry Lemonade Soda

  • Juice of 2 Lemons or ⅓ cup Lemonade
  • 1 Tbsp Blueberry Syrup
  • ½ can Prebiotic Lemon or Lime Soda or Sparkling Water

Directions

    For the Tuna Salad

    1. In a medium bowl, combine tuna, chopped basil or dill, mayonnaise, plain yogurt, lemon juice, Dijon mustard, and chili crisp oil
    2. Add finely chopped cucumber
    3. Season with salt and pepper
    4. Mix until well combined

    For the Blueberry Lemonade Soda

    1. Add lemon juice and blueberry syrup to a glass
    2. Top with prebiotic soda or sparkling water
    3. Stir gently

    To Assemble the Snack Plate

    1. Place tuna salad in a small bowl on serving plate
    2. Arrange cherry tomatoes, carrots, and beet slices around the plate
    3. Add a small bowl of beet hummus
    4. Fill stuffed dates with either parmesan or ghee and dark chocolate
    5. Add crackers to the plate
    6. Serve with blueberry lemonade soda
