Ingredients

    For the Verde Sauce

  • 1 (4.4oz) can Wild Planet Wild Sardines In Extra Virgin Olive Oil with Lemon

  • 3 Tomatillos, peeled and rinsed
  • ½ cup Fresh Parsley or Cilantro
  • 3 Garlic Cloves, peeled
  • Juice of 1 Lemon
  • 2 Tbsp Olive Oil

  • 2 tsp Dijon Mustard

  • Salt and Black Pepper to taste
  • For the Wrap

  • 1 Tortilla or Lavash slice
  • 3 large Eggs, beaten
  • ¼ cup Grated Mozzarella
  • ¼ Avocado, sliced
  • Handful of Microgreens or Baby Arugula
  • Additional Olive Oil for cooking

Directions

  1. Combine all verde sauce ingredients in a high-speed blender
  2. Blend until smooth, then season to taste
  3. Heat a nonstick pan over medium heat with olive oil
  4. Season beaten eggs with salt and pepper
  5. Soft scramble eggs in heated pan
  6. Warm tortilla or lavash in a separate pan or microwave
  7. Layer tortilla with scrambled eggs, cheese, avocado, and greens
  8. Drizzle with verde sauce
  9. Fold wrap tightly, sealing the ends
  10. Return wrap to pan with a little olive oil if needed
  11. Cook 1-2 minutes per side until golden and crispy
  12. Serve immediately with additional sauce on the side
