This Brussels Sprout Sardine Caesar Salad is the perfect easy weeknight meal or lunch recipe. It takes less than 15 minutes to make and is fully gluten free with a dairy free option. Using sardines in this salad adds tons of extra nutrients such as EPA and DHA Omega-3s, iron, and potassium.

This Brussels Sprout Sardine Caesar Salad is the perfect easy weeknight meal or lunch recipe. It takes less than 15 minutes to make and is fully gluten free with a dairy free option. Using sardines in this salad adds tons of extra nutrients such as EPA and DHA Omega-3s, iron, and potassium.

Ingredients

    For the Caesar dressing

  • 1 Tbsp Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 1 Tbsp Dijon mustard

  • 1/2 cup Mayonnaise

  • 1/2 cup Avocado Oil

  • 1/4 cup Parmesan Cheese (or dairy free)

  • 2 Tbsp Lemon Juice

  • 2 cloves Garlic

  • Salt and pepper to taste

  • For the salad

  • 1 cup chopped Brussels sprouts

  • 1 cup chopped Arugula

  • 2-3 Tbsp Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 1/4 cup Green Olives, sliced

  • 2 Tbsp Feta cheese (or dairy free)

Directions

  1. In a blender or food processor, combine the Dijon mustard, mayonnaise, avocado oil, Parmesan cheese, lemon juice, garlic, and sardines. 

  2. Blend until smooth and creamy. Season with salt and pepper to taste.

  3. On a cutting board, chop the Brussels sprouts and arugula. Add to a large bowl.

  4. Top with sardines, green olives and feta cheese.

  5. Drizzle with the Caesar dressing and toss to coat.
