Give your Tuscan-style pasta a sustainable and protein-packed twist by adding sardines! This creamy Italian pasta dish also includes garlic, sun-dried tomatoes, spinach and Parmesan.
16 oz Pasta (penne or rigatoni)
1 (4.4oz can) Wild Planet Wild Sardines in Extra Virgin Olive Oil
4 oz whole Sun-dried tomatoes
3 Garlic cloves, minced
16 oz Spinach
2 cups Heavy cream
1 cup Sour cream
1 cup grated Parmesan
1 tsp Italian seasoning
1 tsp Red chili flakes
Salt and pepper to taste
Cook pasta according to package directions. Strain and set pasta aside.
Set large pan to medium heat. Empty can of sardines in large pan including the olive oil. Sauté and break up pieces for a few minutes.
Add in some oil from the jar of sun-dried tomatoes then throw in the minced garlic. Sauté.
Add in sun-dried tomatoes with some of its oil and the spinach. Cook until wilted.
Next, you’ll want to add in the heavy cream and sour cream. Stir in salt, pepper, Italian seasoning, and red chili flakes.
Set pan to low heat and let sauce simmer and thicken for a few minutes. Add in Parmesan followed by the pasta. Serve and enjoy!
