Crispy Buffalo Tuna Taquitos. This is a great recipe for a busy day because you probably already have a can of tuna in your cupboard, and you can have these tuna taquitos hot and ready to eat in just 30 minutes with a side of buffalo sauce and avocado cilantro cream. I used my favorite Wild Planet Albacore Wild Tuna. They catch only smaller migratory fish that are naturally lower in mercury. Swap it with seafood where you can to add more critical EPA & DHA Omega-3s to your diet.

Crispy Buffalo Tuna Taquitos. Ingredients

    TAQUITOS

  • 3 (5oz) cans Wild Planet Albacore Wild Tuna

  • 4 oz Cream Cheese, at room temperature

  • 1 Jalapeño, seeded if desired, and chopped

  • 2 Tbsp Pickled Jalapeños, chopped

  • 1/3 cup fresh Cilantro, chopped

  • 1/3 cup fresh Dill, chopped

  • 1/3 cup Buffalo Sauce + more for serving

  • 1 cup shredded Pepper Jack or Cheddar Cheese

  • 16-18 Corn Tortillas, warmed

  • Olive Oil, for rubbing

  • AVOCADO CILANTRO CREAM

  • 1 /2 cup crema Mexicana or Sour Cream

  • 1 Avocado

  • 1/4 cup sliced Jalapeño Pickles

  • 1/2 tsp Salt

  • 1 tsp Garlic Powder

  • Juice of 1 Lime

  • 1 cup Cilantro

Directions

  1. Preheat the oven to 425° F.

  2. In a bowl, combine the tuna, cream cheese, jalapeño, pickled jalapeños, cilantro and dill. Stir in the cheese and buffalo sauce.

  3. Warm the tortillas for 30 seconds to 1 minute in the microwave, until pliable. Spoon 2 tablespoons of the tuna mixture down the middle of the tortilla. Roll up and place seam-side down on the baking sheet. Repeat with remaining tortillas and tuna mixture.

  4. Brush each rolled up tortilla with olive oil and bake for 5-8 minutes, then flip and cook another 5 minutes, or until the cheese has melted and the tortillas are crisp.

  5. Meanwhile, make the avocado cilantro cream. Combine all ingredients in a blender and blend until smooth.

  6. Serve the taquitos with buffalo sauce, avocado cilantro cream, and any other desired toppings.
