Ingredients

  • 1 lb Baby Yellow Potatoes

  • 3-4 Tbsp Olive Oil
  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • ½ cup Plain Greek Yogurt
  • ¼ cup Mayonnaise
  • 1 Tbsp Dijon Mustard
  • Juice of 1 Lemon
  • 2 Garlic Cloves, minced
  • ½ cup Pickles, finely chopped
  • ½ Red Onion, finely chopped
  • 2 Tbsp Fresh Chives, chopped
  • ¼ cup Fresh Dill, chopped
  • 1 tsp Apple Cider Vinegar

  • Salt and Black Pepper to taste

Directions

  1. Preheat oven to 425°F
  2. Line a large, rimmed baking pan with parchment paper
  3. Bring a large pot of salted water to boil
  4. Add potatoes and cook 10 minutes until fork tender
  5. Drain potatoes and transfer to prepared baking pan
  6. Slice larger potatoes in half
  7. Smash each potato directly on the baking pan with a glass cup or jar
  8. Use a fork to help remove potatoes from glass if needed
  9. Drizzle generously with olive oil and season with salt
  10. Roast 15-20 minutes until deeply golden and crispy
  11. In a large bowl, combine tuna, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, garlic, pickles, red onion, chives, dill, and apple cider vinegar
  12. Mix until well-combined
  13. Season with salt and black pepper to taste
  14. Fold in crispy potatoes and serve
