Ingredients

    For the Crostinis

  • 4 (5oz) cans Wild Planet Albacore Wild Tuna

  • 4 large Eggs
  • ⅔ cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder

  • ½ tsp Crushed Red Pepper Flakes

  • For the Caesar Dressing

  • ¾ cup Plain Non-Fat Greek Yogurt
  • 1 Lemon, juiced
  • 1 (4.4oz) can Wild Planet Wild White Anchovies In Water

  • 2 Garlic Cloves
  • ⅓ cup Parmesan Cheese
  • ½ tsp Black Pepper

  • For Assembly

  • 2 heads Romaine Lettuce, finely chopped
  • ¼ cup Grated Parmesan Cheese
  • Fresh Cracked Black Pepper

Directions

    Make the Crostinis

    1. Preheat oven to 375°F
    2. Line a sheet tray with parchment paper
    3. In a large bowl, mash tuna until very small pieces remain
    4. Add eggs, parmesan, garlic powder, and red pepper flakes
    5. Mix well until thoroughly combined
    6. Scoop mixture into 16 portions and place on parchment
    7. Oil hands to prevent sticking, then flatten each portion into small rounds
    8. Bake 40-45 minutes until golden brown and firm to touch
    9. Remove and cool completely

    Make the Caesar Dressing

    1. Blend yogurt, lemon juice, anchovy, garlic, parmesan, and black pepper until smooth
    2. Set aside

    Assemble

    1. Wash and finely chop romaine lettuce
    2. Toss lettuce with Caesar dressing and extra parmesan until well coated
    3. Top each cooled crostini with dressed Caesar salad
    4. Finish with additional parmesan and fresh cracked black pepper
    5. Serve immediately
