Enjoy this delicious spin on a classic tuna melt. Tuna salad, made with mayo and red & green onions, inside a zucchini boat and topped with melted cheese.
1 (5 oz) can Wild Planet Albacore Wild Tuna
2-3 Tbsp light Mayo
2 pieces Green onion (chopped)
3 Tbsp Red onion (chopped)
Salt & Pepper
2 small Zucchini
Cooking spray
Cheese of choice
Preheat the air-fryer to 375F
Wash and prep the zucchini. Cut the ends and cut them in half (lengthwise).
Carefully scrape the core of the zucchini, and make sure not to puncture the zucchini.
Spray cooking spray on the air fryer tray, and roast the zucchini halves for 6-8 minutes.
Meanwhile, prep the tuna melt filling. In a bowl, combine tuna, mayo, red onion, green onion (leave some for garnish), salt, and pepper. Mix until everything is well combined. Taste and adjust to your liking.
After zucchini roasts, fill each zucchini half with the tuna mixture. Divide the tuna mixture evenly, and top with your favorite cheese.
Back to the air-fryer (375F) for 2-3 minutes or until the cheese is melted. Enjoy!
