Ingredients

  • 2 (5 oz) cans Wild Planet Albacore Solid Wild Tuna In Extra Virgin Olive Oil

  • ½ cup Celery, finely chopped
  • ½ cup Yellow or White Onion, finely chopped
  • 2 Tbsp Chives, finely chopped
  • 2 Tbsp Giardiniera, finely chopped
  • ⅓ to ½ cup Mayonnaise, plus extra for grilling
  • ½ tsp Yellow Mustard

  • Kosher Salt to taste
  • Freshly Ground Black Pepper to taste
  • 1 package Cocktail Rye or Pumpernickel Bread (or 9 sandwich-size slices)
  • 12 slices Cheddar Cheese
  • 12 slices Provolone Cheese
  • Baby Romaine Lettuce
  • Pickle Slices
  • Marinated Red Onions

Directions

  1. Heat oven to 250°F
  2. In a large mixing bowl, combine tuna and its oil, celery, onion, chives, giardiniera, mayonnaise, mustard, salt, and pepper
  3. Mix until fully combined
  4. If using sandwich-size bread, cut off crusts and cut into 2½-inch pieces
  5. To assemble each sandwich: layer cheddar cheese on bread, add 1 Tbsp tuna salad, top with second bread slice, add provolone cheese, another 1 Tbsp tuna salad, and final bread slice
  6. Repeat until all sandwiches are assembled
  7. Spread thin layer of mayo on top of each sandwich
  8. Heat skillet over medium heat
  9. Cook sandwiches mayo-side down until golden and crispy, 2-3 minutes
  10. Spread mayo on top, flip carefully, and cook another 2-3 minutes
  11. Transfer to parchment-lined baking sheet and keep warm in oven
  12. Repeat with remaining sandwiches
  13. Once all are cooked, open each sandwich and add baby romaine, pickle slice, and marinated red onions
  14. Close sandwiches and arrange on platter
  15. Serve immediately
