1 (3.9oz) can Wild Planet Wild Smoked Mackerel Fillets in Extra Virgin Olive Oil

1 (4.4oz) can Wild Planet Wild Mackerel Fillets in Extra Virgin Olive Oil
Brioche Bun, toasted
Cheese of Choice
1/4 cup Flour
1 Egg
1/4 cup Panko
Olive Oil, for frying
1/4 cup Mayonnaise
1 Scallion white, finely chopped
1 Dill sprig, chopped
1 Tbsp sweet Relish
1/4 Lemon, juiced
Salt & Pepper
Mix all the sauce ingredients in a small bowl, taste, and adjust/add more seasoning, dill, scallion, lemon and relish as needed. Then set aside in the fridge.
Remove the mackerel fillets from the tin and pat dry. Then dip in flour, followed by the egg, and then coat with panko breadcrumbs. Then set aside.
Heat a skillet over medium-high heat and drizzle with olive oil. Once hot (about 350°), carefully add the breaded mackerel. Cook for 2-3 minutes per side, or until golden brown and crispy.
Once done, transfer the mackerel to a paper towel-lined plate and season with salt.
Assemble the sandwich by spreading some sauce on the bottom bun, followed by the fried mackerel, then add a slice of cheese and more sauce. Enjoy!
