I had never tried mackerel before in my life - and I'm 71 years old. I liked the mackerel fillets more than the sardines, although the sardines are good, too. My cholesterol numbers have improved since I began eating more tuna, salmon, sardines, and now mackerel.

These mackerel fillets in olive oil are delicious and very versatile for using in many types of recipes. Decanted and drenched in lemon juice, I use them in my Thai fish salad, alongside Italian pastas, in my Provencale fish casserole, and just like tuna salad. I look forward to to discovering how to use them in seafood risotto.
