Ingredients

    For the Fried Potato Chips

  • 3 Russet Potatoes, thinly sliced with mandoline (or peeler for skins)

  • Frying oil (4-5" deep)

  • Salt

  • For the Spicy Tuna

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1 Tbsp Soy Sauce

  • 1" Fresh Ginger, peeled and grated

  • 1 Garlic Clove, grated

  • Salt and Black Pepper to taste

  • For the Spicy Mayo

  • ½ cup Kewpie Mayonnaise (or ¼ cup mayo + ¼ cup plain Greek yogurt)

  • 2 Tbsp Soy Sauce

  • 1 Tbsp Hot Sauce or Sriracha

  • For Toppings

  • Pickled Onions

  • Ripe Avocado, chopped

  • Scallions, thinly sliced

  • Fresh Cilantro for garnish

  • Sesame Seeds for garnish

Directions

    Prepare the Potatoes

    1. Add thinly sliced potatoes to large bowl filled with cold water

    2. Add 1 cup ice and stir gently to incorporate

    3. Let sit 20-30 minutes

    4. Drain well and pat dry with kitchen cloth

    Fry the Potatoes

    1. Place large saucepan or skillet over medium-high heat

    2. Add 4-5" deep of frying oil

    3. Heat to 375°F until glistening

    4. Working in batches, fry potatoes until deeply golden, 2-3 minutes

    5. Use slotted spoon to transfer to paper towel-lined plate

    6. Season lightly with salt while still hot

    7. Repeat with remaining potatoes

    Make the Spicy Tuna

    1. In small bowl, combine tuna, 1 Tbsp soy sauce, grated ginger, and grated garlic

    2. Mix with fork, gently breaking up tuna while keeping some larger chunks

    3. Season with salt and black pepper to taste

    4. Set aside

    Make the Spicy Mayo

    1. In separate bowl, combine mayo, remaining soy sauce, and hot sauce

    2. Whisk until smooth

    Assemble the Nachos

    1. Layer fried potato chips with seasoned tuna

    2. Add chopped avocado

    3. Top with pickled onions

    4. Drizzle generously with spicy mayo

    5. Garnish with fresh cilantro and sesame seeds

    6. Serve warm
