1 piece sourdough bread
Extra Virgin Olive Oil
1/2 cup sour cream
1 Tbsp Dijon mustard
1 (5oz) can Wild Planet Foods Wild Pacific Mackerel
1 egg, sunny side up
Salt and pepper, to taste
Lightly drizzle extra virgin olive oil on bread, and toast in pan until golden brown.
In a bowl, mix sour cream and Dijon mustard until combined.
Spread sour cream mix on toasted bread.
Add arugula atop the sour cream and mustard.
Add Wild Planet Wild Pacific Mackerel.
Place sunny side up egg on top of mackerel.
Top with salt and pepper to taste, and enjoy!
