Directions

    Lemon Breadcrumbs

    1. Add the butter and garlic to a small non-stick skillet over medium heat, and allow the butter to melt. Once melted and the garlic begins to sizzle, add the breadcrumbs, tossing consistently so the breadcrumbs don't burn. Once the breadcrumbs begin to brown, remove from the heat and add the lemon zest and season with salt. Then set aside to cool.

    Pasta

    1. Bring a large pot of salted water to a boil.  Once boiling, add the Orecchiette and cook according to instructions.

    2. While the pasta is cooking, add EVOO, smashed garlic, and the Calabrian Chili paste to a pan over medium heat. Once sizzling, add the Tuna and cooking for 2-3 minutes. Then deglaze the pan with white wine, and let the wine reduce by half. By now, you should get a shallow, slightly thickened sauce.

    3. Once the Orecchiette have about 2-3 minutes remaining, transfer to the pan with the tuna. Add a few tablespoons of pasta water, fresh parsley, and a drizzle of EVOO.  Toss until the pasta is fully coated and a sauce comes together. Taste, and adjust seasoning as needed.

    4. Transfer to a bowl and finish with fresh lemon juice and a sprinkle of breadcrumbs.
