The pepperoncini tuna salad brings tangy heat that's balanced by sweet honey and fresh dill, while pickled beets and peppery arugula add color and complexity.

Ingredients

    For the Za'atar Focaccia

  • 1 batch Overnight Sourdough Focaccia dough

  • ¼ cup Olive Oil, plus more for drizzling

  • ¼ cup Za'atar Seasoning

  • 2 Tbsp Sesame Seeds

  • For the Pepperoncini Tuna Salad

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • ¼ cup Mayonnaise

  • 3 Tbsp Pepperoncini, finely chopped

  • 1 Tbsp Pepperoncini Brine

  • 1 Tbsp Olive Oil

  • 1 Tbsp Honey

  • 1 Tbsp Fresh Dill, chopped

  • Salt and Black Pepper to taste

  • For Assembly

  • Basil Pesto

  • Pickled Beets

  • Baby Arugula

  • Olive Oil for toasting

Directions

    For the Za'atar Focaccia

    1. Preheat oven to 425°F

    2. Line large sheet pan with parchment paper

    3. Drizzle parchment generously with olive oil

    4. Transfer overnight sourdough focaccia dough onto pan

    5. Grease hands with olive oil

    6. Gently stretch dough to ½" thickness

    7. Drizzle top with more olive oil

    8. Evenly sprinkle za'atar seasoning and sesame seeds on surface

    9. Use fingers to create dimples throughout focaccia

    10. Bake 18-25 minutes, rotating pan halfway through, until deeply golden

    11. Remove and let cool slightly

    For the Pepperoncini Tuna Salad

    1. Add tuna to a bowl

    2. Mash well with a fork

    3. Add mayonnaise, chopped pepperoncini, brine, olive oil, honey, and dill

    4. Mix well until combined

    5. Season with salt and black pepper to taste

    To Assemble the Sandwich

    1. Slice individual slab of focaccia

    2. Cut in half lengthwise to create top and bottom slices

    3. Place on parchment-lined sheet pan

    4. Drizzle with olive oil

    5. Broil on high for 1 minute until toasted

    6. Spread basil pesto on bottom slice

    7. Layer with pepperoncini tuna salad

    8. Add baby arugula and pickled beets

    9. Top with toasted focaccia slice

    10. Serve immediately
