Protein Loaded Egg Tuna Salad

This is a go-to meal-prep-friendly lunch. Made with Wild Planet sustainably sourced albacore tuna & hard boiled eggs, mixed with fresh celery, red onion, pickles, avocado, mayo & Dijon mustard to make a wonderfully tasty, nutrient dense lunch.

This salad can be enjoyed with a spoon right out of the bowl, but you can also serve on bread as a sandwich, in lettuce wraps, with carrots or celery as a protein-packed dip, or over a bed of salad greens.

Ingredients

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 4 Eggs, hard boiled

  • ¼ cup Celery, chopped (about two stalks)

  • 3 Tbsp Red Onion, chopped

  • 3 Tbsp Pickles, chopped

  • 2 Tbsp Mayonnaise, use more as needed

  • 2 Tbsp Dijon Mustard, use more as needed

  • 1 small Avocado, diced

  • ¼ tsp Salt

  • ½ tsp Pepper

  • ¼ tsp Celery Seed

  • 2 Tbsp fresh Cilantro, chopped

  • 2 Tbsp fresh Dill, chopped

Directions

  1. Grab a large mixing bowl. Drain tuna and add it to the bowl. Add all other ingredients.

  2. Mix everything well with a fork or spoon. Give it a taste and add more mayo, or mustard, salt or pepper as needed. 

  3. Now build your sandwich or lettuce cups, or just eat right out of the bowl with a spoon. Enjoy!
