These Salmon Patties transform Wild Planet Pink Salmon into restaurant-worthy patties. Seasoned with fresh herbs and Asian-inspired flavors, then topped with perfectly caramelized onions and a spicy-sweet honey aioli, these burgers elevate pantry staples into a memorable meal. Served on toasted brioche buns, they offer the perfect balance of crispy exterior and tender interior.

Ingredients

    For the Patties:

  • 3 (6oz) cans of Wild Planet Wild Pink Salmon

  • 2 eggs
  • ½ cup panko breadcrumbs
  • 2 Tbsp parsley, finely chopped

  • 2 Tbsp chives, finely chopped

  • 1 Tbsp low-sodium soy sauce

  • ¾ tsp each: kosher salt, black pepper, garlic powder

  • 1 Tbsp lemon juice

  • Olive oil for frying
  • For Caramelized Onions:

  • 1 Tbsp butter

  • 1 Tbsp olive oil

  • 2 sweet onions, thinly sliced
  • Salt and pepper to taste
  • Pinch brown sugar
  • 1 Tbsp balsamic vinegar

  • For Hot Honey Aioli:

  • ⅓ cup mayonnaise
  • 1 Tbsp hot honey

  • 1 tsp whole grain mustard

  • 1 garlic clove, grated
  • Fresh lemon juice to taste
  • For Assembly:

  • 4 brioche buns, toasted
  • Lettuce leaves
  • Sweet potato fries (optional)

Directions

  1. Squeeze out as much moisture as you can from the canned salmon and add it to a large bowl. Add eggs, crumbs, herbs, soy sauce, seasonings and lemon juice, tossing to combine. Form four large patties (squeezing out any excess moisture) and place in the fridge for 20-ish minutes while you make the toppings.
  2. Heat butter and oil in a skillet over medium heat. Add onions and cook for 15-20 minutes, until deeply golden brown. When they start developing some color add the salt, pepper and brown sugar to encourage the caramelization process. When they are deeply caramelized, add the balsamic vinegar to deglaze the pan.
  3. Whisk together aioli ingredients. Cook salmon burgers in a swish of olive oil in a nonstick skillet for about 3-4 minutes per side, until golden brown. Assemble!
