These Wild Pink Salmon Fritters offer a quick and flavorful way to enjoy Wild Planet Foods' Wild Pink Salmon. Seasoned with traditional Caribbean aromatics and spices, these crispy fritters transform sustainable canned salmon into a satisfying meal or appetizer. The simple batter and fresh herbs create the perfect vessel for the salmon, while the scotch bonnet pepper adds a gentle warmth to each bite.

Ingredients

  • 2 (6oz) cans Wild Planet Wild Pink Salmon

  • ½ Onion, chopped

  • 2 Garlic Cloves, minced

  • 2 Scallion stalks, chopped,

  • Leaves from 1 Thyme sprig

  • ½ Scotch Bonnet Pepper, minced (remove seeds)

  • ¼ Green Bell Pepper, chopped

  • ¼ Red Bell Pepper, chopped

  • 1 tsp Seafood Seasoning

  • 1 tsp Salt (or to taste)

  • ½ tsp Black Pepper (or to taste)

  • 2 cups all-purpose Flour

  • 1 tsp Baking Powder

  • 1 to 1½ cups Water

  • Neutral high-heat Oil for sautéing and frying

Directions

  1. Heat 1 Tbsp of oil in a pan over medium heat. Sauté the freshly chopped seasonings and aromatics in the pan for about 1 minute. 

  2. Add the pink salmon to the pan and combine everything well. Season with seafood seasoning, salt, and pepper, and when warmed through, set aside to cool.

  3. To a bowl, combine the flour and baking powder. Add the sautéed salmon to the flour and incorporate everything well.

  4. Add water a little bit at a time and mix until you get a consistency similar to a thick pancake batter.

  5. Coat the bottom of a skillet with oil and heat over medium heat. Scoop large spoonful’s of the batter into the pan and fry in batches on both sides until the fritters are golden brown.

  6. Cool on a wire rack, serve warm, and enjoy!
