Ingredients

  • 1 pound russet potatoes
  • 1 white onion
  • 1 (3.9oz) can of Wild Smoked Pink Salmon Fillets in Extra Virgin Olive Oil

  • ½ cup all-purpose flour
  • 1 tsp baking powder

  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Optional Toppings

  • Applesauce
  • Sour cream
  • Fresh chives
  • Additional kosher salt

Directions

  1. Using a box grater, grate potatoes and onion.

  2. Rinse the grated mixture thoroughly under cold water to remove excess starch.

  3. Transfer mixture to a clean dish towel and wring out as much moisture as possible.

  4. Place dried potato-onion mixture in a large mixing bowl.

  5. Add flaked salmon, flour, baking powder, eggs, salt, and pepper. Mix gently to combine.

  6. Heat ¼ inch olive oil in a large skillet over medium-high heat.

  7. Drop batter by spoonfuls into hot oil and flatten slightly.

  8. Fry for 3-4 minutes per side until golden brown and crispy.

  9. Remove with a slotted spoon and drain on paper towels or wire rack.

  10. Sprinkle with salt while hot and serve immediately.
