Directions

  1. Preheat oven to 350°F
  2. Slice poblano pepper in half lengthwise
  3. Remove seeds and membrane with a knife
  4. Place pepper halves on baking sheet
  5. Bake for 15 minutes until slightly softened
  6. Meanwhile, prepare Spanish rice according to package instructions
  7. Remove peppers from oven
  8. Fill each half with salmon, cooked rice, and crumbled queso fresco
  9. Return to oven for another 10 minutes
  10. Top with sour cream
  11. Drizzle with honey
  12. Sprinkle with red pepper flakes and Tajin to taste
  13. Serve immediately
