Ingredients

    For the salad

  • 2-3 stems of Dino kale

  • 3 hearts of Lettuce

  • 2 Tbsp Olive oil

  • Bread loaf

  • For the Caesar dressing

  • 1/4 heaping cup Parmesan, freshly grated

  • 1 filet Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 1/2 cup Mayonnaise

  • Juice of 1 medium Lemon

  • 2-3 cloves of Garlic, crushed

  • 1/4 cup Olive oil

  • 2 tsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • Sea salt and cracked black pepper, to taste

Directions

    To make the Caesar dressing

    1. Add all the salad dressing ingredients, except the olive oil, into an immersion blender container or jar. Blend while slowly drizzling in olive oil as the dressing combines. Blend for about 1-2 minutes until creamy and smooth. Per your preference, add a bit more olive oil or lemon juice to thin it out. Recipe makes about 1 cup of dressing.

    To make the croutons

    1. Preheat the oven to 400°F.

    2. Cut 3-4 thick slices of bread into large cubes. I used Rosemary Garlic infused bread. Place on a baking tray and toss in olive oil.

    3. Bake for about 10-15 minutes until golden brown and crunchy.

    To make the salad

    1. Chop up the romaine lettuce. Remove the stems from the Dino kale. Massage the kale with olive oil to soften the leaves before adding to the salad bowl.

    2. Assemble the salad with croutons first, then the dressing and Parmesan cheese. Toss before serving.
