Ingredients

  • 3 (4.4oz) cans Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 2 Tbsp Celery, diced

  • 4 Tbsp Mayonnaise

  • 2 tsp Fresh Tarragon, minced

  • 3 tsp Fresh Dill, minced

  • 2 tsp Fresh Lemon Juice

  • 1 tsp Lemon Zest

  • 1½ Tbsp Red Onion, diced

  • Coarse Salt and Freshly Ground Pepper to taste

  • 1 pint Cherry Tomatoes for garnish

  • 18 Toast Points for serving

  • 1 head Butter Lettuce, cleaned and dried

  • 2 Tbsp Chopped Fines Herbs for garnish

Directions

  1. In a medium bowl, combine sardines, red onion, celery, mayonnaise, tarragon, dill, lemon zest, and lemon juice

  2. Mix well, gently breaking up sardines

  3. Season with salt and pepper to taste

  4. Arrange butter lettuce leaves on 4-6 individual plates

  5. Divide sardine salad evenly among plates

  6. Scatter cherry tomatoes around the edges of each plate

  7. Sprinkle with fines herbs

  8. Add three toast points to each plate

  9. Serve immediately
