Sardines stewed in a rich and tangy tomato sauce is a popular dish in Guyana and the Caribbean, but this elevated version includes garlic, onion, fresh herbs and Serrano peppers,
1 (4.4 oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil
2 tsp Olive oil from sardine can
1/4 cup Yellow onion
1/2 Serrano pepper, thinly sliced
1 tsp minced Garlic
3/4 cup diced Tomato
2 sprigs Thyme
¼ tsp Black pepper
¼ tsp Salt
1/4 cup Water
1 tsp Lime juice
1 tsp Parsley
Drain oil from Wild Planet Wild Sardines and reserve. In a pan over medium heat, add oil.
When the oil is hot add onion and sauté for 2-3 minutes before adding garlic and serrano pepper. Cook for about 1 minute then add diced tomato and sauté for 2-3 minutes.
Next, add thyme, black pepper, salt, water and lime juice and allow to simmer for about 3-4 minutes until tomatoes soften and sauce thickens.
Add sardines and parsley then spoon sauce over sardines and cook for 4-5 minutes. Remove from heat and serve immediately.
