Take your breakfast tacos up a notch by adding sardines! Scrambled, eggs, bacon & sardines fried in bacon grease make a delicious and protein-packed breakfast.
6 slices Bacon
1 (4.4oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil
5 Eggs
2 Tbsp Milk of choice
Seasonings to taste: Salt, pepper, cayenne, garlic powder, onion powder, turmeric
Corn tortillas
Arugula
Chives
Cotija cheese
Salsa or hot sauce
Dice bacon. Place in a skillet, then heat pan to medium heat. Cook bacon for 5-7 minutes, or until golden and crispy.
Remove bacon from heat and move to a plate lined with paper towels to absorb the grease.
Remove (but save!) excess bacon grease from pan, leaving just enough to lightly sauté your sardines briefly on each side.
In a bowl, whisk together eggs, milk, and seasonings.
Place some of the reserved bacon grease in a pan and cook scrambled eggs until cooked through.
Warm tortillas.
Assemble your breakfast tacos by placing down some arugula first.
Top with egg, Wild Sardines in Extra Virgin Olive Oil, bacon, chives, and cotija cheese. Enjoy with salsa or hot sauce!
