Ingredients

    For the Salad

  • (8oz) Rotini or Pasta of choice (whole wheat or chickpea for extra protein)

  • 2 (5oz) cans Wild Planet Albacore Tuna

  • ½ cup Corn (canned or frozen), drained or thawed
  • ½ cup Black Beans, canned, rinsed and drained
  • ⅓ cup Red Bell Pepper, diced
  • ⅓ cup Green Bell Pepper, diced
  • ½ cup Cherry Tomatoes, halved
  • ¼ cup Red Onion, finely chopped
  • ¼ cup Fresh Cilantro, chopped
  • 1 Jalapeño, finely chopped
  • For the Dressing

  • ½ cup Greek Yogurt
  • 2 Tbsp Olive Oil
  • 2 Tbsp Lime Juice
  • 2 Tbsp Honey
  • 1 tsp Chipotle Powder

  • ½ tsp Cumin

  • ½ tsp Smoked Paprika

  • ¼ tsp Garlic Powder

  • ½ tsp Dried Oregano

  • 1 tsp Salt

  • ½ tsp Freshly Cracked Black Pepper

Directions

  1. Cook pasta according to package directions
  2. Drain and rinse with cold water
  3. Set aside to cool completely
  4. In a small bowl, whisk together all dressing ingredients
  5. Taste and adjust seasoning as needed
  6. In a large mixing bowl, combine cooled pasta, tuna, corn, black beans, bell peppers, tomatoes, jalapeño, red onion, and cilantro

  7. Pour dressing over salad
  8. Toss gently until everything is well coated
  9. Chill in refrigerator for at least 30 minutes before serving
  10. Can be enjoyed immediately or stored for meal prep
